Professor Amaury bitetti

Amaury Bitetti is a Brazilian Jiu Jitsu black belt and a legendary figure in the sport. He also holds black belts in Judo and Muay Thai. Considered one of the greatest athletes of the 1990s by Gracie Magazine, Amaury was a dominant force in competition, becoming a two-time IBJJF World Champion and a six-time Brazilian Jiu Jitsu Champion.

In addition to his success in Jiu Jitsu, Amaury competed in Vale Tudo and MMA, facing top-level opponents in events such as the UFC and Abu Dhabi Submission Wrestling. He has also trained and coached some of the biggest names in combat sports, including Rodrigo “Minotauro” Nogueira, Anderson Silva, and Vitor Belfort.

As a promoter, Amaury founded Bitetti Combat, one of Brazil’s premier MMA events, which has featured world-class fighters and helped shape the sport’s growth.

Amaury Bitetti is a Brazilian former mixed martial arts fighter and promoter holding the rank of 7th degree black and red coral belt in Brazilian jiu jitsu. Considered by many as one of the best BJJ competitors of all time, Bitetti is a two-time world jiu jitsu champion in open weight, the first-ever to win the category, and a two-time Brazilian national champion. After competing in Vale Tudo / MMA Bitetti founded the MMA fight organization Bitetti Combate.

Professor Gilson Nunes

Jiu Jitsu Instructor

Gilson Nunes is a 3rd-degree Brazilian Jiu-Jitsu black belt with over 20 years of experience in competition and teaching. Born and raised in Fortaleza, Ceará, Brazil, Gilson began his Jiu-Jitsu journey at the age of 12 under the guidance of Paulo ‘Maninho’ Ivano. Even as a young trainee, his eagerness to spar with adults earned him the nickname Nenem, meaning “Baby” in Brazilian jargon. His dedication and talent led him to earn his black belt in 2010 at the remarkably young age of 20. Gilson’s Jiu-Jitsu lineage traces back through esteemed practitioners: Mitsuyo Maeda > Carlos Gracie > Helio Gracie > Rolls Gracie > Romero Cavalcanti > Roberto Traven > Carlos David > Ronaldo Cruz > Gilson Nunes.

As a competitor, Gilson has achieved remarkable success on the international stage, with victories over high-level opponents in both gi and no-gi competitions. His major accolades include:

Beyond his competitive accomplishments, Gilson is a passionate and dedicated instructor. He has guided 10 students from white belt to black belt, demonstrating his commitment to nurturing the next generation of Jiu-Jitsu practitioners. Gilson’s teaching philosophy centers on consistency, discipline, and the belief that with hard work and dedication, anyone can progress in Jiu-Jitsu.

Fun fact: Gilson is a big fan of sushi. In his free time, he enjoys going to all-you-can-eat sushi restaurants.

Professor Davi Girão

Jiu Jitsu Instructor

Davi is a Certified IBJJF Brazilian Jiu Jitsu second degree black belt. He was born and raised in Fortaleza, Brazil, where he trained under Professor Joao Filho, a fifth-degree black belt representing Gracie Humaita.

After moving from Brazil to the United States, Davi continued his training under Keiser Girão at Checkmat Dallas. With over six years of experience teaching in the U.S., he has worked with students of all ages and skill levels, from beginners to advanced practitioners.

Davi is an accomplished competitor, having won multiple IBJJF tournaments and World League championships.

A fun fact about Davi—coming from a beach town, he is also a high-level kite surfer.

Professor David Akina

Jiu Jitsu Instructor

David Akina is a Certified IBJJF Brazilian Jiu Jitsu black belt with over 20 years of experience in competition and teaching. Born and raised in Hawaii, David began his Jiu Jitsu journey at BJ Penn’s school in Hilo, HI and Relson Gracie’s Jiu Jitsu in Honolulu. Dallas became his second home and began his training with Keiser Girao and Checkmat Dallas. His passion for Jiu Jitsu led him to competition, teaching and studying this art wholeheartedly. Competition has taught David a lot about life like humiliation, being humble, learning under extreme pressure, self defense, focus, managing adrenaline, how to win and lose. David has had the privilege to learn Jiu Jitsu from some of the best instructors in the world. His goal is to continue to grow in this art and to share the gift of Jiu Jitsu with people who are passionate about learning the art of Jiu Jitsu

Fun fact: David loves spending time with his daughters doing fun things in Allen, TX.

David Douglas

David is a Saint Louis native with a rich boxing heritage, hailing from four generations of champions, including three Saint Louis Boxing Hall of Fame inductees. A decorated amateur boxer from age 10 to 22, he earned titles with the All-Army and USA boxing teams, later making his professional debut at the Superdome in New Orleans. Trained by legendary coaches like Frankie Douglas, Kenny Loehr, Pat Nappi, “Papa” Joe Barrientes, and Curtis Cokes, David sparred with world-class contenders and champions, honing his craft under elite guidance.
In 1996, he channeled his expertise into a dynamic boxing fitness program, blending high-intensity workouts with the art and physics of the sport. Burning 700-900 calories per session, his regimen builds lean muscle, sharpens focus, and boosts athletic performance while reducing stress—proven effective for all fitness levels. A U.S. Army 101st Airborne veteran, David also holds certifications as a USA Boxing Coach, licensed Texas and Missouri boxing/MMA trainer, judge, referee, and experiential therapist. 

His accomplishments span founding a boxing fitness program at the prestigious Cooper Fitness Center, training MMA icon Ken Shamrock for record-breaking UFC and Bellator events, and officiating major fights like Pacquiao vs. Margarito. A former radio host of “Fight Talk” and writer for East Side Boxing, David continues to coach amateurs, support “Guns & Hoses” fundraisers, and elevate fighters in boxing and MMA worldwide.
